It's fitting that La Conserva is Spanish for fruit preserves because this coffee has delicious layers of stone fruit notes that are complimented by rich and smooth chocolate notes. This has quickly become a favorite coffee for many of our staff.
Huehuetenango, meaning place of the ancients, is one of the most distinguished coffee growing regions in Guatemala. This coffee is grown in the foothills of the Sierra de los Cuchumatanes at elevations between 5000-6000 ft. The mountain summits at 12,588 ft.
This wonderfully balanced profile is the result of processing experiments allowing the coffee to spend more time in cherry form before being pulped, washed, and given a submerged fermentation for 20-30 hours underwater.
