In the mountainous forests of Oaxaca, Mexico nearly 6,000 feet above sea level, grow truly exceptional coffees, unmatched in both process and quality. Coffee plants here are cultivated amongst the native trees, offering ideal shade and conditions for these plants to thrive. Tomas Pinacho, our featured producer in Santa Cruz, Ozolotepec, works the first coffee farm ever started in the area, utilizing coffee trees planted by his father decades ago. Tomas is a pioneer in the region as one of the primary contributors to the lot that comes out of this territory annually. He’s worked tirelessly in recent years to improve production quality on his farm, paving the way for other nearby producers to follow suit. Our team had the honor of traveling to Tomas’s farm in March of 2024.
This coffee undergoes an extended ferment, before being washed and sun-dried on concrete patios. Tomas Pinacho is a crisp and sweet cup with notes of nectarine, vanilla, and pie crust.
